  • Arroz con Pollo

    Ingredients

    • 2 cups rice
    • 3 cups water
    • Salt to taste
    • 2 large chicken breasts
    • 1 cube chicken broth flavored
    • 1 tablespoon olive oil (for rice)
    • 1/2 green pepper
    • 1/2 red bell pepper
    • 3 tablespoons olive oil (for sautéing)

    Arroz con Pollo

    Rice with chicken or “arroz con pollo” is one of my favorite dishes. Today, I'll show you how I make my chicken rice.

    Ingredients

    1-2 packetsSazon Goya with Coriander and Annatto

    2 cubes of sofrito (recipe here)

    NOTE

    If you don’t have any sofrito - combine garlic, onion and cilantro to taste and combine all of them together.

    1. In a saucepan or a pot put 3 cups water and 1 tablespoon oil and salt to taste, bring to a boil.

    2. Add rice to boiling water. Stir. Cook uncovered over medium heat until all the water has evaporated (about 10 min.)

    3. Stir rice, reduce heat, cover ,and simmer for 10-15 minutes more. Set aside.

    chicken

    1. Boil the chicken breasts in a little water with chicken flavor cube until you see no pink. Remove from heat and let cool.

    2. Cut chicken into strips or small cubes. Set aside.

    Combine Rice with Chicken

    1. In a large skillet, heat 3 tablespoons olive oil over low heat.

    2. Add the two cubes of sofrito, then the peppers, then add the capers.

    3. Add the seasoning packet Goya

    4. Add chicken (stir)

    5. Add rice (stir until rice turns yellow in color).

    6. Remove from heat and serve.

    Serves 5
