  • Arroz Con Leche

    Ingredients

    • 1 c. white rice
    • 2 x liters (approx 1/2 gallon) of Lowfat milk
    • 1 x cinnamon stick
    • 3/4 c. sugar
    • 1 sm rind of green lime.

    Directions

    1. Cook the rice using only half of the lowfat milk, with the green lime rind. Be patient and cook it at medium-low, till the rice is very soft. Try not too move it too much, but do stir a little, occasionally.
    2. If it was necessary, you may add in some cool lowfat milk, if the rice has absorbed all the liquid.
    3. Once the rice is cooked, add in the rest of the lowfat milk, the cinnamon stick, and the sugar. Stir to make sure everything's mixed.
    4. Continue with medium-low heat, till you see it gets a thick texture.
    5. After which, turn off the heat and leave it alone till it cools down.
    6. It serves about 6 to 8.I hope you like it and I'll be glad to receive any comments or possibly questions.
    7. "Arroz con leche" (Rice with lowfat milk, literally) is a very popular dessert in Mexico, and I believe it is also in most of Latin America and there is also a similar thing in India. I hope you like it.
    8. There are many minor variations, one of the most popular is the addition of a c. of raisins. Personally, I like it without raisins.
