  • Arroz Con Gandules

    Ingredients

    • 1/2 lb Dry pigeon peas
    • 4 slc Bacon, crisp, minced
    • 1/2 c. Onion, minced
    • 1/2 c. Green pepper, diced
    • 4 clv garlic, finely chopped
    • 1 med Ham hocks
    • 1 pkt Sazon seasoning
    • 1/2 c. Tomato sauce
    • 1 Tbsp. Salt
    • 1/2 tsp Grnd black pepper
    • 2 c. Rice

    Directions

    1. Soak beans and drain. combine 7 c. water and beans in a 6 to 8 qt pot. Cook bacon in skillet till crisp. Drain bacon drippings, leaving about 1 Tbsp. in pan and cook onion, pepper and garlic till tender. Stir mix into beans in pot. Add in ham hock. Bring to boil. Reduce heat, cover and simmer till beans are tender. Add in more water if necessary. (There should be about 4 c. of liquid at this point.) Add in remaining ingredients. Bring to boil. Reduce heat and simmer covered 20 to 25 min or possibly till rice is tender. serves 8.
