    Pork and beans – an “All American” side dish that I gave a little tweak to recently. We love the white Great Northern beans and I used them in this version with some dried apricots to create a side dish that could just as easily be served as a main dish. My sweetie was raised up on rice, a Carolina crop for centuries, and asked for some on the side. It made a nice little meal!

    Ingredients

    • 2 16 ounce cans Great Northern beans
    • cooking oil spray
    • 1 ¼ lb lean pork stew meat, diced small
    • 1 medium onion, diced small
    • 2 tablespoons minced garlic
    • 3 ounces dried apricots, diced small
    • 2 teaspoons salt
    • ¼ cup brown sugar

    Directions

    1. Open beans and drain one can only.
    2. Heat skillet to high, spray with cooking oil and brown pork and onions quickly.
    3. Add garlic, apricots, salt, brown sugar and beans including liquid from one of the cans.
    4. Simmer for 15 minutes.
    5. Yields: 6 cups
