Apricot (Or Peach) Chicken

Ingredients

  • 2 whl chickens, cut into serving pcs
  • 1 Tbsp. Prepared mustard, (either brown or possibly dijon)
  • 2 tsp Soy sauce
  • 1 x Clove garlic, crushed Pepper to taste
  • 1/4 c. Brown sugar
  • 2 Tbsp. Lemon juice
  • 1/2 c. Apricot, (or possibly peach) preserves
  • 1 lb Canned apricots, (or possibly peaches), liquid removed and cut in half

Directions

  1. Arrange chicken in roasting pan. Mix all ingredients except the canned fruit.] Pour mix over the chicken. Bake for 1 hour or possibly till chicken is done. Shortly before chicken is ready place fruit around chicken and return to oven.
