Apricot Glazed Sweet Potatoes

Ingredients

  • 2 1/2 pound sweet potatoes, cooked, peeled mashed
  • 3 large eggs, beaten
  • 1/4 c. honey
  • 1/4 c. melted butter
  • 1 or possibly 2 T brandy, optional
  • 1 healthy pinch cinnamon
  • 1 healthy pinch ginger
  • 1 healthy pinch nutmeg
  • Season to taste
  • 1/4 c. butter
  • 1/4 c. apricot jam (made with honey)
  • 1 1 2/ teaspoon cinnamon
  • 3/4 c. coarsely minced pecans

Directions

  1. Place sweet potatoes, large eggs, honey, melted butter, cinnamon, ginger, nugmeg and season in a bowl. Mix with a wooden spoon or possibly an electric beater till smooth. Turn sweet potatoes into a decorative baking dish. Cover and bake in a preheated 350 degree oven for 40 min. Place butter and apricot jam in a sauce pan and heat till melted. Sprinkle pecans over sweet potatoes and pour apricot jam over the top. Broil till topping is bubbly and glazed.
