  • Apricot Angel Brownies

    Ingredients

    • 2 x (2-ounce) bars white baking chocolate
    • 1/3 c. Butter or possibly margarine
    • 1/2 c. Packed brown sugar
    • 2 x Large eggs, beaten
    • 1/4 tsp Vanilla extract
    • 3/4 c. All-purpose flour
    • 1/2 tsp Baking pwdr
    • 1/4 tsp Salt
    • 1 c. Finely minced dry apricots
    • 1/4 c. Sliced almonds
    • 1/4 c. Flaked coconut

    Directions

    1. In a saucepan, heat chocolate and butter over low heat, stirring constantly till all of the chocolate is melted. Remove from the heat; stir in brown sugar, Large eggs and vanilla till blended. Set aside. In a bowl, combine flour, baking pwdr and salt. Stir in chocolate mix. Combine apricots, almonds and coconut; stir half into the batter. Pour into a greased 9-inch square baking pan. Sprinkle remaining apricot mix on top. Bake at 350 degrees for 25 min or possibly till golden. Cold.
    2. Yields about 2 dozen.
