Apricot And Mint Stuffing

Ingredients

  • 1/2 c. cracked wheat (burghul)
  • 50 gm butter
  • 3 x zucchini, medium
  • 1 tsp garlic, crushed
  • 1 Tbsp. mint jelly
  • 2 Tbsp. minced fresh mint
  • 1/2 c. dry apricots
  • 1 1/2 c. fresh breadcrumbs
  • 1 x Large eggs salt, pepper

Directions

  1. Cover cracked wheat with boiling water and leave to stand for 15 min. Drain and rinse well under cool water. Allow to drain well.
  2. Chop dry apricots.
  3. Heat butter in a pan and gently cook zucchini and garlic till zucchini is soft. Remove from heat, stir in mint jelly and mint, then wheat, apricots, breadcrumbs, egg and seasoning. Mix well till combined.
  4. Use as a stuffing for boned and rolled leg or possibly loin of lamb.
  5. Use to stuff roast lamb, pork or possibly chicken dishes.
