Applesauce Carrot Cake With Lemon Cream Che
Ingredients
- 2 c. All-purpose flour
- 2 tsp Baking pwdr
- 2 tsp Baking soda
- 3/4 tsp Salt
- 1 Tbsp. Grnd cinnamon
- 1 tsp Grnd allspice
- 1 tsp Fresh-grated nutmeg
- 1/2 c. Liquid removed canned crushed pineapple in unsweetened juice
- 1/4 c. Raisins
- 1/2 c. Pecan or possibly walnut pcs
- 1 c. Sugar
- 3 lrg Large eggs
- 1 c. Packed dark brown sugar
- 1 1/4 c. Bland vegetable oil
- 1/2 c. Applesauce
- 2 tsp Pure vanilla extract
- 2 c. Finely shredded peeled carrots (about 4)
- 2/3 c. Shredded sweetened coconut
- 8 ounce Cream cheese (regular or possibly "light" but not nonfat) softened
- 1/2 stk unsalted butter, softened
- 1 c. Confectioners' sugar
- 1 sm Lemon, Grated zest and juice of
- 1/2 tsp Pure vanilla extract
- 1/4 tsp Lemon extract
