    Applesauce banana bread is easy and delicious. Applesauce banana bread is one of our favorite banana bread recipes because it is so moist, keeps well for several days in a cool spot or refrigerated, and is wonderful with your morning coffee or as a snack with milk anytime.  The recipe can be doubled to make 2 loaves and children love it as well as adults. We love banana bread and make it at least once a week! Applesauce banana bread will quickly become a favorite way to use up bananas. 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt 2 eggs 1/2 cup applesauce 1/2 cup white granulated sugar 1 cup buttermilk 2 ripe bananas, mashed 2 tablespoons cooking oil (I use Canola) Whisk together the flour, baking powder, baking soda and salt in a large bowl.  Add eggs, applesauce, white sugar, buttermilk, bananas and cooking oil.  Mix with mixer or spoon.  I just use a spoon.  Spray a 9 x 5 inch bread pan with cooking spray and bake in preheated 350 degree oven for 55 to 60 minutes until center tests done.  Let cool 10 minutes before removing from pan.  Makes 1 loaf.  Enjoy!
