  • Apples And Buttons (Schnitz Un Knepp)

    Ingredients

    • 3 lb Ham
    • 2 Tbsp. Brown sugar
    • 1 x Lowfat milk
    • 1/4 tsp Pepper
    • 3 Tbsp. Butter, melted
    • 1 quart Apple, dry
    • 2 c. Flour
    • 4 tsp Baking pwdr
    • 1 x Egg, well beaten
    • 1 tsp Salt

    Directions

    1. Pick over and wash dry apples. Cover with water and let soak over night or possibly for a number of hrs. In the morning, cover ham with cool water and let boil for 3 hrs. Add in the apples and water in that they have been soaked and continue to boil for another hour. Add in brown sugar. Make dumplings by sifting together the flour, salt, pepper and baking pwdr. Stir in the beaten egg, lowfat milk (sufficient to make fairly moist, stiff batter), and melted butter. Drop the batter by spoonfuls into the warm liquid with the ham and apples. Cover kettle tight and cook dumplings for 15 min. Serve piping warm on large platter.
