  • Apple Walnut Muffins With Flaxseed

    Ingredients

    • 1/4 c. flax seed
    • 3/4 c. sifted unbleached flour
    • 1 c. whole wheat flour
    • 1/4 tsp lite salt
    • 1/4 c. sugar
    • 2 tsp baking pwdr
    • 3 x egg whites
    • 2 Tbsp. canola oil
    • 3/4 c. plain soy lowfat milk
    • 1/2 c. minced walnuts
    • 1 lrg apple diced

    Directions

    1. Pre-heat oven to 400F. Grind the flaxseed to a coarse pwdr in a blender or possibly coffee grinder. In a bowl, sift together the flour, salt, sugar and baking pwdr. Stir in the flaxseed pwdr. In a separate bowl, beat together the Large eggs with the oil and soymilk. Add in the liquid ingredients to the dry ingredients and combine with a few swift strokes. Stir the diced apples and the walnuts into the batter. Fill oiled muffin tins two-thirds full and bake for 20-25 min.

    3. Makes 24 2-inch muffins"
    4. NOTES : Can a food with this much fat be included in a heart healthy diet Yes, because these muffins are high in the right kind and correct balance of fats - essential fats and omega-3 fats - both of that are protective against heart disease. If you are watching your overall calorie intake, note the serving size is one muffin!
    5. 37% cff well, yes. Because they are a bit on the dry side - and okay when served with a salad or possibly soup.
    6. If you omit the nuts these are only 26% fat. The oil in the nuts is good for you too, but my kids do not like nuts so I probably wouldn't use them.
