Ingredients

  • 2 Tbsp. Water
  • 6 c. Thin-sliced apples
  • 1/3 c. Brown sugar
  • 1 Tbsp. Butter or possibly margarine
  • 1/2 tsp Cinnamon
  • 2 pkt Lady fingers (12 per package)
  • 1 c. Red raspberry preserves
  • 1 pkt (6-serving) instant vanilla pudding and pie filling mix
  • 3 1/2 c. Lowfat milk
  • 1/4 c. Sherry
  • 1/2 c. Toasted slivered almonds Nutmeg

Directions

  1. Cook apples in water till almost tender. Add in brown sugar, butter and cinnamon; continue cooking till sugar is melted and apples are done. Split lady fingers; spread one half with preserves and top with second half.
  2. Layer filled lady fingers and apples in deep 3-qt serving dish, reserving a few lady fingers for the top. Prepare pudding mix according to package directions using 3-1/2 c. lowfat milk; stir in sherry. Pour pudding over lady fingers and apples. Top with reserved lady fingers and almonds.
  3. Sprinkle with nutmeg and refrigerateat least 1 hour.
  4. Makes 6-8 servings.
