Ingredients

  • 3 c. Flour
  • 2 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Allspice
  • 1/2 tsp Salt
  • 1 1/2 c. Brown sugar
  • 4 x Egg whites
  • 1 c. Plain lowfat yoghurt
  • 1/3 c. Oil Or possibly 1/3 c. applesauce
  • 3 x Apples, peeled and finely Minced

Directions

  1. Preheat over 400 F. Grease 12 muffin c.. Using a fork stir flour with baking pwdr, baking soda, spices, salt and sugar in large mixing bowl. In another bowl whisk Large eggs with lowfat yoghurt and oil. Stir in apples and nuts.
  2. Spoon batter into muffin c.. C. will be very full with batter heaped in middle. Bake 15-17 min. Leave in pan 5 min and then turn out.
