    Apple Pie Caramel Cheesecake

    This is a wonderful recipe to use for that special occasion or just because. The perfect melding of flavors.


    • Crust:
    • 2 Cups Graham Cracker Crumbs
    • 2 T Sugar
    • 1 Stick Margarine
    • 1 16 oz can of Apple Pie Filling
    • Filling:
    • 5 8oz packages Cream Cheese, softened
    • 1 ½ Cups Light Brown Sugar
    • 3 Eggs
    • 1 T Vanilla Extract
    • 1 T Pumpkin Pie Spice
    • 2 t Cinnamon
    • Topping:
    • Topping: 14 oz package of Caramels, unwrapped
    • 1 5 oz can Evaporated Milk


    1. Crust:
    2. Combine Graham Cracker Crumbs and Sugar.
    3. Melt Margarine.
    4. Stir Margarine into crumbs and use fork until all completely mixed.
    5. Press into 9” springform pan with the back of a spoon.
    6. Empty Apple Pie Filling into bowl and chop into small pieces.
    7. Spread Apple Pie Filling over the bottom of crust.
    8. Filling:
    9. Beat Cream Cheese until smooth.
    10. Add sugar in ½ cup increments.
    11. Add Eggs, one at a time.
    12. Mix in Vanilla and seasonings well.
    13. Pour on top of prepared crust.
    14. Bake at 350 degrees for 40 minutes. Shut off oven and open door leaving cheesecake in oven for 30 more minutes.
    15. Let cool completely.
    16. Topping:
    17. In a double boiler melt together Caramels and Evaporated Milk
    18. With the cheesecake still in the springform pan pour the Carmel mixture over the top.
    19. Let cool completely.
