Ingredients

  • 2 stalk Celery Sliced
  • 1 x Onion Minced
  • 1 Tbsp. Macadamia Nut Oil Note 1
  • 2 x Apples Diced
  • 7 1/2 ounce Seasoned Bread Stuffing
  • 1 c. Nonfat Veg Chicken Broth, Low Sod Or possibly Nonfat Chicken Broth
  • 1/2 c. Sliced Almonds Note 2
  • 1/2 c. Diced Dry Apricots
  • 1/2 c. Currants
  • 1/2 c. Applesauce Note 3

Directions

  1. Note 1: Original recipe used 1/2 C butter. I had decided to cut back on the nuts which were called for so I used macadamia nut oil to give the dish a more nutty flavor and used much less of the oil.
  2. Note 2: Original recipe used 1 C pecans...didn't have any pecans so I used sliced almonds and less of them.
  3. Note 3: Original recipe used 1/2 C apple butter... didn't have any so I subbed the apple sauce.
  4. Heat oven to 350F. In skillet over med heat, cook celery and onion in warm oil (or possibly butter) 4 in. Add in apples; cook 5 minutes. In bowl, combine other ingredients. Stir in onion mix. Place in greased 2 1/2 quart baking dish; bake 45 minutes.
  5. Work Time: 15 minTotal Time: 1 hr
  6. This has a wonderful flavor!! Wouldn't hesitate to serve to company.
