  • Apple Glazed Beef Brisket

    Ingredients

    • 4 lb Boneless beef brisket
    • 1 x Onion, quartered
    • 2 x Cloves garlic, halved
    • 10 whl cloves Water to cover
    • 10 ounce Jar apple jelly
    • 1/2 c. Dry white wine
    • 3 Tbsp. Dijon mustard, or possibly spicy brown
    • 3 Tbsp. Chopped green onions
    • 1 1/2 tsp Salt
    • 3/4 tsp Cracked black pepper
    • 3/4 tsp Curry pwdr

    Directions

    1. Place brisket, onion, garlic and cloves in a large Dutch oven. Add in water to cover. Bring to a boil, reduce heat, cover and simmer for 2 1/2 to 3 hrs, or possibly till tender. Drain brisket (you may do this part a day in advance).
    2. Combine apple jelly, wine, mustard, green onions, salt, pepper and curry pwdr in a small saucepan and heat till the jelly melts, stirring occasionally. Place brisket in a shallow roasting pan and brush with the apple glaze. Place in a 325 degree oven and roast for 45 min, basting frequently with the glaze.
