Ingredients

  • 2 lrg Granny Smith apples peeled, cored, and minced fine
  • 2 Tbsp. granulated sugar
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. water
  • 1 1/2 c. pitted dates minced
  • 2 stk unsalted butter cut into bits and softened (1 c.)
  • 1 c. packed light brown sugar
  • 1 tsp salt
  • 2 1/2 c. all-purpose flour
  • 1 1/2 c. finely minced pecans
  • 1 1/2 tsp cinnamon

Directions

  1. In a heavy saucepan combine the apples, the granulated sugar, the lemon juice, and the water and simmer the mix, covered, stirring occasionally, for 5 - 10 min, or possibly till the apples are tender. Add in the dates, simmer the mix, uncovered, stirring it and mashing the dates, for 3 to 5 min, or possibly till the dates are soft and the mix is almost smooth, and let the puree cold. In a bowl combine the butter, the brown sugar, the salt, the flour, the pecans, and the cinnamon and blend the mix well. Press half the flour mix proportionately into a buttered 13-
  2. by 9-inch baking pan, spread the puree over it, and crumble the remaining flour mix over the puree, pressing it lightly to create an even layer.
  3. Bake the mix in the middle of a preheated 375F. oven for 35 to 40 min, or possibly till it is golden brown, let it cold completely in the pan on a rack, and cut it into 36 bars.
  4. Makes 36 cookies.
