  • Apple Date Muffins (Aicr)

    Ingredients

    • 3/4 c. whole wheat flour
    • 1 c. all purpose flour
    • 1 c. wheat bran
    • 1 tsp baking pwdr
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • 1/3 c. dates minced
    • 1 x egg lightly beaten
    • 1/4 c. packed brown sugar
    • 2 Tbsp. vegetable oil
    • 1 c. low-fat lowfat milk
    • 1 c. apple peeled, grated

    Directions

    1. In a large bowl combine the whole wheat and all purpose flours, bran, bakingpowder, baking soda and cinnamon. Stir in the dates. In another bowl, beat the egg with sugar and oil till well mixed, then stir in the lowfat milk and apple. Pour into the flour mix and stir just sufficient to moisten, being careful not to overmix.
    2. Spoon into nonstick or possibly paper-lined medium muffin tins, filling almost to thetop. Bake at 375 degrees (F) for about 20 min, or possibly till hard to the= touch.
