  • Apple Date Cheddar Loaf With Walnut Hard Sauce

    Ingredients

    • 1 x egg
    • 1/4 c. vegetable oil
    • 1 c. lowfat milk
    • 1 c. sugar
    • 1 c. all purpose flour
    • 1 c. whole wheat flour
    • 1 Tbsp. baking pwdr
    • 1/2 tsp salt
    • 1 c. + 2 tbsp grated cheddar cheese
    • 1 c. Mutsu (Crispin) or possibly Granny Smith apples, peeled and diced
    • 1/2 c. dates, minced
    • 2 Tbsp. brown sugar Walnut Hard Sauce
    • 1 c. walnut pcs
    • 1/2 c. unsalted butter
    • 1 c. brown sugar
    • 1 tsp cinnamon
    • 1/4 c. whiskey or possibly brandy
    • 1/2 c. whipping cream

    Directions

    1. Preheat oven to 350 F. Grease a loaf pan.
    2. Whisk together egg, oil, lowfat milk and sugar.
    3. In a separate bowl, sift flours, baking pwdr and salt and stir into egg mix.
    4. Mix in 1 c. cheese, apples and dates.
    5. Bake for 30 min. Combine 2 Tbsp cheddar with brown sugar and sprinkle on top of loaf when at the last 10 min of baking.
    6. Walnut Hard Sauce:Preheat oven to 350 F.Toast walnuts lightly in oven for 12-15 min till browned.
    7. Heat butter with brown sugar over medium high heat. Stir in cinnamon. Bring up to a simmer, stirring. Add in whiskey carefully (watching for flames).
    8. Stir in cream and simmer for 1 minute.
    9. Remove from heat and stir in walnuts.
    10. Serve warm. Sauce can be chilled and reheated in the microwave.
    11. To Assemble:Pour sauce over slices of loaf. Enjoy!
