Ingredients

  • 4 x Cox's Apples, cored, peeled and sliced
  • 4 Tbsp. Orange Juice
  • 6 ounce Brown Sugar
  • 4 ounce Butter
  • 1 lrg Egg, Beaten
  • 8 ounce Plain Flour
  • 1/2 tsp Bicarbonate of Soda
  • 1/2 tsp Salt
  • 1/2 tsp Baking Pwdr
  • 1 tsp Cinnamon
  • 4 ounce Fresh Dates, Minced
  • 2 ounce Walnut Pcs

Directions

  1. Preheat oven to 190C/375F/Gas Mark 5.
  2. Grease a 12 by 7 inch baking tin.
  3. Place apples and orange juice in a pan. Cover and cook over a low heat for 10-12 min till soft. Mash to create a puree.
  4. In a bowl, beat sugar and butter till light and creamy. Beat in egg and apple puree. sift in flour, bicarbonate of soda, salt, baking pwdr and cinnamon. Mix in the minced dates and walnuts.
  5. Pour cake mix into prepared tin and bake in preheated oven for 40 min till risen and form to the touch.
  6. Allow to cold and cut into 12 squares.
