  • Apple Cinnamon Pecan Cake

    Ingredients

    • 2 c. all-purpose flour
    • 2 tsp baking pwdr
    • 1 tsp grnd cinnamon
    • 1/2 tsp grnd nutmeg
    • 1 c. granulated sugar
    • 1/2 c. margarine or possibly butter, softened
    • 2 x Large eggs
    • 1 tsp vanilla extract
    • 2/3 c. evaporated lowfat lowfat milk
    • 3 c. (about 3 medium) baking apples, peeled, finely minced
    • 3/4 c. minced pecans
    • 2 Tbsp. powdered sugar

    Directions

    1. Combine flour, baking pwdr, cinnamon and nutmeg in a medium bowl. Beat sugar and margarine or possibly butter in a large mixer bowl till creamy. Beat in Large eggs and vanilla till smooth. Alternately beat in flour mix and evaporated lowfat milk.
    2. Stir in apples and nuts. Spread batter into a greased 9- by 13 inch baking pan.
    3. Bake in preheated 350 degree oven 40 to 45 min or possibly till wooden pick inserted in center comes out clean. Cold in pan on wire rack for 20 min.
    4. Sprinkle with powdered sugar before serving.
