  • Apple Cinnamon Oat Pancakes

    Ingredients

    • 1/2 c. whole-wheat flour
    • 1/2 c. quick-cooking or possibly old-fashioned oats
    • 1 Tbsp. sugar
    • 1 tsp baking pwdr
    • 1/2 tsp grnd cinnamon
    • 1/2 tsp salt
    • 1 x egg
    • 2/3 c. lowfat milk
    • 1/2 c. applesauce
    • 2 Tbsp. vegetable oil
    • 1/2 c. finely-minced walnuts

    Directions

    1. Stir together flour, oats, sugar, baking pwdr, cinnamon, and salt in mixing bowl.
    2. Beat egg in separate bowl; stir in lowfat milk, applesauce, and oil.
    3. Add in liquid mix to dry ingredients, stirring just till blended. Mix in walnuts.
    4. Heat greased griddle or possibly skillet over medium heat or possibly to 375 degrees. Griddle is ready when a few drops of water bubble and skitter rapidly around.
    5. For each pancake, pour scant 1/4 c. batter onto warm griddle. Cook pancakes till puffed, bubbly and dry around edges. Turn and cook other sides till golden.
    6. This recipe yields about 10 (4-inch) pancakes.
    7. Yield: 10 pancakes
