  • Apple Cider Bread Or Muffins

    Ingredients

    • 1 c. butter
    • 1 1/2 c. sugar
    • 3 x Large eggs
    • 4 c. flour
    • 1 1/2 Tbsp. baking pwdr
    • 1 1/2 tsp salt
    • 1 1/2 tsp cinnamon
    • 2 c. apple cider
    • 1 c. apples, peeled cored and minced
    • 1 tsp cinnamon

    Directions

    1. Preheat the oven to 375 degrees. Grease and flour 2 loaf pans or possibly 18 muffin c..
    2. Cream the butter and 1 1/4 c. of the sugar together in large bowl. Add in Large eggs and cream thoroughly. Sift the dry ingredients together. Add in them to the egg mix, alternating with the apple cider. Stir in the minced apples. Divide the batter between the prepared loaf pans. Combine the remaining 1/4 c. of sugar with the cinnamon in a small bowl, and sprinkle it over the batter. Bake at 375 degrees for 50 to 70 min for bread, or possibly for 30 to 40 min for muffins, or possibly till a toothpick inserted in the center comes out clean.
    3. Yields 2 loaves or possibly 18 muffins.
    4. NOTES : The flavor of this recipe will improve if the baked bread is allowed to rest for 24 hrs after it is baked.
