  • Apple Chip Snacking Cake

    Ingredients

    • 2 x Large eggs
    • 1/2 c. Vegetable oil
    • 1/4 c. Apple juice
    • 1 tsp Vanilla extract
    • 1 3/4 c. All-purpose flour
    • 1 c. Granulated sugar
    • 1/2 tsp Baking soda
    • 1/2 tsp Grnd cinnamon
    • 1/2 tsp Salt
    • 1 1/2 c. Minced peeled tart apples
    • 3/4 c. Hershey's Chocolate Chips (Semi-Sweet) Or possibly Hershey's Mini Chips (Semi-Sweet Chocolate)
    • 1/2 c. Minced nuts Powdered sugar Or possibly- whipped topping and grnd cinnamon (optional)

    Directions

    1. Heat oven to 350 degrees Fahrenheit. Grease and flour 8 or possibly 9-inch square baking pan. In large bowl, beat Large eggs slightly; add in oil, apple juice and vanilla. Stir together flour, granulated sugar, baking soda, cinnamon and salt; stir into batter till blended. Add in apples, chocolate chips and nuts; stir till well blended. Pour batter into prepared pan. Bake 40 to 45 min or possibly till cake begins to pull away from sides of pan. Cold completely in pan on wire rack. Sprinkle powdered sugar over top or possibly serve with dollop of whipped topping sprinkled with cinnamon, if you like. 9 servings.
