Apple & Carrot Soup with Cream-Pecan Topping

- 3 Apples (Your choice) peeled, cored, chunked
- 6 carrots, peeled cut into slices
- one teaspoon cinnamon a few dashes of nutmeg
- 1 cup Pure Apple Juice
- 1/2 cup Cold Water
- 3 tablespoons crushed pecans
- 2 dollops of whipped cream topping
Directions
- In a food processor (or can use blender) add apple chunks, carrot slices, water and apple juice, puree until smooth
- Add into a stock pot with a lid, add cinnamon, nutmeg and stir well on medium heat, cover and cook for 12 minutes-stir during cooking time.
- Ladle into bowls and garnish with a dollop of whipped cream and pecans
