    Apple butter snacking cake is so easy and delicious. This apple butter snacking cake has become one of our favorite desserts.  We all love apple butter and it is so easy to throw together when you want a quick dessert.  This cake is so moist it does not need a frosting but you could add our caramel drizzle. Apple butter snacking cake gets better each day you keep it and you could double the recipe for a larger cake. 1 cup all-purpose flour 3/4 cup brown sugar 1 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon nutmeg 4 tablespoons butter, melted 1 cup apple butter 1 teaspoon vanilla extract 1 egg 1 cup raisins 1/2 to 1 cup walnuts (could use pecans) In a large bowl whisk together the flour, brown sugar, baking soda, salt and nutmeg.  Stir in the melted butter with a spoon, then add apple butter, vanilla extract, egg, raisins and nuts to batter.  Stir all together and spray a 8 x 8 baking dish with cooking spray.  Spread batter in dish and bake in preheated 350 degree oven for 35 to 40 minutes or until the center tests done.  Makes about 12 pieces of cake.  Enjoy! Note:  I don’t use a mixer when making this cake and it turns out fine.  You could use a mixer if you want but I like that it is so easy to mix up with a spoon.
