Apple and Mushroom Salad
Light Fare for Lunch or a Great Starter Salad Ingredients
- 2-1/2 cups mushrooms, sliced
- 2 apples, peeled and diced
- 1 tsp. salt
- 6 romaine lettuce leaves
- 8 oz. peeled and seeded cucumber
- 1/2 cup green onions
- 1 Tbsp. tarragon
- 1 tsp. garlic
- 2 Tbsp. lime juice
- 2 Tbsp. olive oil
- 1-1/2 cups plain non-fat yogurt
Directions
- For the Dressing: place in a blender the diced cucumber, green onion, tarragon, garlic, lime juice, olive oil, and 1/2 tsp salt and blend until smooth.
- Pour into a lidded jar and add the yogurt.
- Shake or stir vigorously until smooth and well blended, makes 2 cups dressing.
- Use 1 cup for the salad and save 1 cup in the refridgerator for up to ten days.
- For the Salad: mix together the mushrooms, apples, 1/2 tsp salt with 1 cup of the dressing.
- Place 1 lettuce leaf on each of 6 plates.
- Divide the salad evenly on each of the lettuce leaves and serve.
