  • Apple And Honey (Gluten And Dairy Free)

    Ingredients

    • 1/2 c. vegetable oil
    • 1/2 c. honey
    • 1/4 c. water
    • 1 c. diced cooked apple
    • 1 c. sultanas (golden brown raisins)
    • 1 c. soy flour
    • 1 c. rice flour
    • 1 tsp baking soda
    • 1/2 tsp cream of tartar
    • 1 tsp cinnamon

    Directions

    1. Preheat oven to 320F, prepare pans. Combine the oil, honey & water & stir in the sultanas & apple. Mix the previously mixed dry ingredients into the wet mix. Spoon into pans & begin cooking without delay, bake for 25-30 mins.
    2. Makes 10 muffins.
    3. Variations: Wheat Free: replace the flours with 2 c. rye flour. Any desired nuts & dry fruits may be added to this mix. One c. addition is sufficient. Suggestions are walnuts, almonds, sunflower seeds, with raisins or possibly dates and/or possibly dry apricots. Minced dry figs with fresh orange peel is tasty.
