Appetizer Shrimp Kabobs
Ingredients
- 2 lb unpeeled large fresh shrimp
- 1/2 c. lemon juice
- 1/2 c. vegetable oil
- 1/4 c. soy sauce
- 3 Tbsp. minced fresh parsley
- 2 Tbsp. finely minced onion
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 clv garlic -- chopped
Directions
- Peel shrimp and devein; set aside. Combine lemon juice, oil soy sauce, parsley, onion, salt, pepper, and garlic in a shallow dish; set aside.
- Arrange shrimp on 6-inch bamboo skewers and place in marinade, turning to coat. Cover and chill 2 to 3 hrs. Remove shrimp from marinade, reserving marinade. Place shrimp on rack of a lightly greased broiler pan.
- Broiler 6 inches from heat 3 to 4 min on each side, basting occasionally with remaining marinade. Serve warm or possibly cool.
