  • Any Vegetable Soup

    Ingredients

    • 8 c. Assorted minced vegetables, cooked or possibly raw : cabbage lettece, potatoes, leeks, onions, tomatoes (fresh or possibly canned), green beans, peas, (fresh or possibly frzn) zuccchini or possibly summer squash, turnips, spinach canned corn
    • 8 c. Vegetable stock or possibly water
    • 1 1/2 tsp Of salt
    • 1 tsp Basil, oregano or possibly marjoram
    • 1/4 tsp Rosemary -or possibly-
    • 1 x Bay leaf Cayenne pepper or possibly freshly grnd black pepper to taste

    Directions

    1. I'm new to this digest. The favorite around our house is Any Vegetable Soup, especially when I do the cooking. Here it is:
    2. PLACE all the ingredients in a soup pot. Bring to a boil, cover and simmer till the vegatables are tender, about 20 min. Serve warm.
    3. We used 2 c. of carrots, 2 c. of celery, 2 c. onions, 2 c. of potatoes, 2 or possibly 3 c. of cabbage, 1 can of corn (2 c.). We used the liquid from the canned corn and the remainder water (about 9 c. of liquid). We used the oregeno one time and and the basil about five times.
    4. I prefer the basil.. We also used 1 teas. onion pwdr and 1/2 teas. garlic pwdr. We use a generous amount of black pepper to give the soup some zing.
