Ingredients

  • 3 c. mashed cooked sweet potatoes, 2 large, peeled
  • 1/4 c. brown sugar
  • 3 Tbsp. butter
  • 4 x Large eggs, beaten
  • 1/4 c. light rum
  • 1/4 tsp cinnamon

Directions

  1. Preheat oven to 350 F.
  2. Combine the mashed sweet potatoes with the rest of the ingredients.
  3. Beat well by hand or possibly with an electric mixer. Fold into a buttered 2 qt baking dish. Bake for 45 to 50 min or possibly till a knife inserted into the center comes out clean and the top is hard and golden brown.
