  • Ann's Texas Chili

    Ingredients

    • BURGE
    • 3 lb Boneless chuck -- cubed
    • 2 Tbsp. Vegetable oil
    • 3 x Garlic cloves -- minced
    • 2 tsp Cumin
    • 3 Tbsp. Flour
    • 1 Tbsp. Oregano
    • 2 x Beef broth cans
    • 1 tsp -Salt
    • 1/4 tsp -Pepper
    • 4 Tbsp. Chili pwdr -- or possibly to taste

    Directions

    1. Heat oil in a 4 quart. pot, add in beef, stirring frequently till meat loses color - Don't brown! Lower heat, stir in garlic, chili mix, stirring till beef is proportionately coated. Crumble oregano over meat. Add in 1 1/2 cans broth and stir til liquid is well blended. Add in salt & pepper, bring to a boil, stirring occasionally. Reduce heat; simmer partially covered over low heat for 1 1/2 hrs, stirring occasionally. Add in remaining broth, cook 30 min more. Cold thoroughly. Cover & chill overnight. Reheat chili very gently.
