  • Angelina's Lemon Cookies (Sicily 1911)

    Ingredients

    • 1/2 c. Crisco
    • 1 1/3 c. Sugar
    • 3 x Egg
    • 1 1/2 tsp Lemon extract
    • 3 x heaping tsp. Baking pwdr
    • 4 c. Flour
    • 1 c. Lowfat milk Frosting
    • 1 c. Confectioner's sugar
    • 1/4 tsp Salt
    • 1/2 tsp Vanilla
    • 1 1/2 Tbsp. Cream Sprinkles

    Directions

    1. Cream shortening and sugar together. Beat in Large eggs one at a time. Add in lemon extract. Sift flour and baking pwdr together. Add in to wet ingredients, alternating with lowfat milk. Roll into balls and bake @425 for 7 min. When cold, frost and add in sprinkles. To make frosting, mix confectioners sugar, salt, vanilla. Adding cream till you get a good thick consistency.
    2. You can substitute Anise flavoring for the lemon extract.
