Ingredients

  • 2 1/2 c. Biscuit baking mix
  • 1/2 c. Shredded coconut
  • 1 c. Whipping cream
  • 2 Tbsp. Margarine, melted

Directions

  1. Preheat oven to 450.
  2. Combine baking mix and coconut until well-blended. Add in whipping cream until well-blended.
  3. Turn onto a lightly floured surface and knead about one minute.
  4. Using a rolling pin, roll out to about 1/2 inch thickness.
  5. Cut into dough, place 2 inches apart on a greased baking sheet and brush tops with melted margarine.
  6. Bake 7 to 10 min, or possibly until light brown.
  7. Can be made ahead of time.
  8. To reheat: preheat oven to 350, cover biscuits and bake 3 to 5 min.
