Ingredients

  • 1 Tbsp. butter
  • 3/4 c. chopped green onions
  • 3/4 c. chopped white onion
  • 1/2 c. chopped carrots
  • 1/2 c. chopped celery
  • 1/4 c. chopped red bell pepper
  • 1/4 c. chopped green bell pepper
  • 2 tsp chopped garlic
  • 1 tsp salt
  • 1 tsp freshly-grnd black pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp grnd nutmeg
  • 1/2 tsp grnd cumin
  • 3 x Large eggs beaten
  • 1/2 c. ketchup
  • 1/2 c. half-and-half
  • 1 1/2 lb grnd turkey
  • 1/2 lb chicken sausage
  • 3/4 c. fresh bread crumbs
  • 2 Tbsp. butter
  • 4 x shallots chopped
  • 1 x fresh thyme sprig
  • 1 x bay leaf Freshly-grnd pepper to taste
  • 1/4 c. chopped red bell pepper
  • 1/4 c. chopped yellow bell pepper
  • 1/2 c. half-and-half
  • 2 tsp chopped garlic
  • 1 c. beef or possibly veal stock
  • 1 c. chicken stock
  • 2 x Roma tomatoes peeled, seeded, and diced
  • 1/2 c. ketchup Salt to taste

Directions

  1. For the Meatloaf: Heat butter in skillet over medium heat. Add in green onions, white onion, carrots, celery, red and green peppers and garlic. Saute/fry till soft, about 10 min.
  2. Combine salt, black pepper, cayenne pepper, nutmeg, cumin and Large eggs in large mixing bowl. Add in ketchup and half-and-half. Blend thoroughly with vegetable mix. Add in turkey, chicken sausage and bread crumbs to vegetable mix. Mix with hands to create loaf.
  3. Place in a greased 9- by 5-inch loaf pan. Bake at 350 degrees till cooked through and nicely browned, 45 to 60 min. Let rest 10 min before serving with Gravy.
  4. For the Gravy: Heat 1 Tbsp. butter in heavy skillet over medium heat. Add in shallots, thyme, bay leaf, pepper to taste and red and yellow peppers. Saute/fry over medium heat till tender, about 10 min.
  5. Add in half-and-half, 1 tsp. pepper, garlic and beef and chicken stocks. Simmer, uncovered, over high heat till liquid is reduced by 1/4, about 10 min.
  6. Add in tomatoes and ketchup and bring to a simmer. Cook, covered, 20 min. Stir in remaining butter and season to taste with salt and pepper. Strain gravy, discarding bay leaf and thyme before serving.
  7. This recipe yields 6 servings.
