Amish Breakfast Casserole

Yummy weekend casserole. Great for brunch. This calls for bacon as the breakfast meat, but you can use sausage,ham or a combination of your choice.

Ingredients

  • 1 lb bacon diced
  • 1 med onion chopped
  • 6 lg eggs, beaten
  • 4 cups shredded hash brown potatoes, thawed
  • 2 cups (8oz) shredded cheddar cheese
  • 12oz small curd cottage cheese
  • 1 1/4 cup shredded swiss cheese

Directions

  1. Preheat oven 350
  2. Grease 9x13 dish with cooking spray
  3. In a lg pan cook bacon and onion till bacon is crisp, drain.
  4. In a lg bowl combine remaining ingredients and stir in bacon- onion mixture. season with salt and pepper to taste
  5. Put into the baking dish
  6. Bake uncovered for 35 to 45 mins until set and bubbly.
  7. Let stand 10-15 mins before cutting
