Ingredients

1 x Extra virgin olive oil
1 x Tomatoes, sliced
1 x Red onions, sliced

1 x Zucchini, slices
1 x Mozzarella, grated
1 x Parmesan, grated

Directions

Pour extra virgin olive oil in bottom of casserole. Layer tomatoes, onions, zucchini and cheese. Repeat layers ending with cheese. Bake 375 till bubbly.
