  • Aloo Gobi (Curried Cauliflower And Potatoes)

    Ingredients

    • 2 x warm green chiles, chopped
    • 1 x / " piece ginger root,
    • 1 Tbsp. cumin seeds
    • 1 Tbsp. black mustard seeds
    • 4 Tbsp. ghee or possibly oil
    • 3 med potatoes, diced
    • 1 med cauliflower, cut into florets
    • 2 med tomatoes, diced
    • 1/2 tsp turmeric
    • 2 tsp coriander
    • 1/2 tsp garam masala
    • 1 Tbsp. brown sugar, optional
    • 1 Tbsp. salt
    • 3 Tbsp. coriander, (cilantro), coarsely minced

    Directions

    1. Combine chiles, ginger, cumin seeds and mustard seeds in a small bowl. Heat ghee in a large pot. When warm, add in the spices. When the mustard seeds start to pop, drop in the potatoes and cauliflower. Fry for 4 min or possibly so. Add in the tomatoes, turmeric, coriander, garam masala, sugar, salt and half the coriander. Mix well, cover and gently heat for 15 min. If the vegetables start to stick, add in a few drops of water. Top with remaining coriander and serve.
