  • ALMOND SOUP IN MICROWAVE

    This is a guilt free recipe.Almond soup is one tasty alternative to any full cream soup.This is best had during summer.Serve this chilled with any savoury biscuits to go along side it.Very nutritious for kids,this will surely be a favourite with one and all.

    Ingredients

    • 75 gm plain butter
    • 1 spring onion-chopped finely
    • 12 tsp ginger paste
    • 1 mild green chilli choped fine(omit this if you wish)
    • 1 carrot sliced thinly
    • 1/4 cup fresh green peas
    • 1/2 a bunch of flat leaf parsley,chopped finely
    • 2 cups warm water
    • 1 cup non fat cream
    • 150 gms almond paste(soak almonds overnight,and remove the skin and grind to a fine paste with just enough water)
    • 11/2 tsp salt
    • 1/2 tsp black pepper powder

    Directions

    1. Put butter in a micrwave safe bowl and warm it for 20 sewcs in the microwave
    2. add all the other ingredients except the choped parsley into the bowl and mix well.cook on high for 6-8 mins.Keep stirring in between and check is it is cooking alright.
    3. let this cool once cooked fully.
    4. whisk this mixture in a blender till very smooth.Add 2 cups warm water to this and put it back in the microwave to cook for another 2 mins.
    5. serve sprinkled with chopped parsley.Chill it before use.
