  • Almond Pancake Mix

    Ingredients

    • 3 c. Nonfat Dry Lowfat milk
    • 2 1/2 c. All-Purpose Flour
    • 1 c. Whole Wheat Flour
    • 1 c. Almonds, Finely Grnd
    • 2/3 c. Baking Pwdr
    • 1/2 c. Sugar
    • 1 Tbsp. Salt

    Directions

    1. In a large bowl, stir all ingredients together till well blended. Store in a resealable plastic bag.
    2. Yield: about 7 1/2 c. pancake mix, sufficient for 3 batches of pancakes.
    3. To make pancakes: In a medium bowl, combine 2 1/2 c. pancake mix, 1 1/4 c. water, 1 egg, and 2 Tbsp. vegetable oil. Stir just till moistened. Heat a greased griddle over medium heat. For each pancake, pour about 1/4 c. batter onto griddle and cook till top of pancake is full of bubbles and underside is golden. Turn with a spatula and cook till remaining side is golden. Regrease griddle as necessary.
    4. Yield: about1 dozen 5-inch pancakes.
