  • Almond Cherry Cheese Cake

    Ingredients

    • 2/3 c. graham cracker crumbs
    • 1/4 c. melted butter
    • 1/2 c. almonds, broken
    • 1/4 c. sugar
    • 8 ounce cream cheese, softened
    • 1/4 c. sugar
    • 2 large eggs
    • 1 c. cherries, canned & liquid removed
    • 1 pt. lowfat sour cream
    • 5 T sugar
    • 1/2 teaspoon almond extract
    • Slivered almonds for garnish
    • Maraschino cherries for garnish

    Directions

    1. Mix crust ingredients and press into bottom and sides of 9" pie plate. Beat cream cheese and sugar till fluffy. Mix large eggs in till creamy and smooth. Mix in cherries. Pour in crust and bake at 375 degrees for 20 min. Let pie cool for 10 min.Mix topping ingredients except for almonds. Pour over pie. Bake at 375 degrees for 5 min. Top or possibly garnish with almonds, cool pie 8 hrs or possibly overnight before serving. Garnish with cherries just before serving.
