Allyson's Sweet Potato Casserole
Ingredients
- 28 ounce can sweet potatoes
- 1/2 stick melted butter
- 2 beaten large eggs
- 1-2 T lowfat milk
- 1 c. brown sugar
- 1/2 c. flour
- 1 stick melted butter
- 1 c. minced pecans, optional
Directions
- 1st Layer: In a mixing bowl, mash the liquid removed sweet potatoes. Add in the beaten large eggs and melted butter and mix thoroughly. Add in lowfat milk if too thick. Place mix in a 9 x 13 inch pan.2nd Layer: In a mixing bowl, mix the brown sugar and flour. Fold in the melted butter and spoon over the first layer.
- 3rd Layer (optional) : Sprinkle on 1 cup minced pecans. Bake at 350 degrees for 30-45 min.
