  • Alligator Sausage And Crawfish Casserole

    Ingredients

    • 1 lb Alligator sausage crumbled, browned, and liquid removed
    • 1 lb Crawfish tails
    • 1 lb Smoked sausage sliced
    • 2 c. Converted long-grain rice
    • 10 ounce Rotelle tomatoes with chiles - (1 can)
    • 1 can Onion soup
    • 1 can Beef consomme
    • 1 bn Green onions minced
    • 1 lb Mushrooms sliced
    • 10 x Garlic cloves chopped
    • 2 x Bay leaves
    • 1 Tbsp. Creole seasoning
    • 1 Tbsp. Freshly-grnd black pepper
    • 1/4 lb Butter or possibly margarine

    Directions

    1. Mix alligator sausage with the remaining ingredients. Place in a covered casserole or possibly pan and cook in a preheated 350 degree oven for 1 hour. After 30 min, stir well and continue cooking for the remaining time. Let cold, uncovered, for a few min and serve.
    2. This recipe yields 10 to 20 servings.
