Ingredients

  • 1 pkt spring roll pastry
  • 1/2 lb chicken thighs shredded
  • 1/2 lb aligator meat shredded
  • 1/2 c. breadcrumbs
  • 5 x chinese cabbage leaves
  • 1 x red onion
  • 1 x garlic clove
  • 1 med red chile
  • 1 sm carrot shredded
  • 10 x snowpeas shredded
  • 1 x red pepper
  • 1 sm ginger knob Oil for frying Sesame oil
  • 1 lrg coriander sprig
  • 1/2 c. raw sugar
  • 1/2 c. white vinegar
  • 1/2 x green pepper finely diced
  • 1/2 tsp freshly-grnd black pepper
  • 1 Tbsp. sesame oil
  • 1/2 c. soy sauce
  • 1 sm red pepper finely minced
  • 1 tsp grnd cinnamon
  • 1 tsp dry shrimp
  • 4 x star anaise

Directions

  1. Heat oil in wok, add in ginger garlic, chile and meats. Toss till cooked through. keep aside.
  2. Heat more oil and saute/fry the vegetables. Combine meat and vegetables and add in breadcrumbs and coriander.
  3. Roll in spring roll pastry and deep fry till golden.
  4. For the sweet and sour sauce, combine all the ingrediants and bring to the boil. Simmer gently for 5 min and serve as dipping sauce with the spring rolls.
