  • Alaska Salmon Chowder

    Ingredients

    • 7 1/2 ounce canned Alaska salmon
    • 1/2 c. minced onions
    • 1/2 c. minced celery
    • 1 x garlic clove chopped
    • 2 Tbsp. margarine
    • 1 c. diced potatoes
    • 1 c. diced carrots
    • 2 c. low salt chicken broth
    • 1/2 tsp thyme
    • 1/4 tsp freshly-grnd black pepper
    • 1/2 c. minced broccoli
    • 13 ounce low-fat evaporated lowfat milk
    • 10 ounce frzn corn kernels thawed Chopped fresh parsley

    Directions

    1. Drain and flake salmon, reserving liquid.
    2. Saute/fry onions, celery and garlic in margarine. Add in potatoes, carrots, reserved salmon liquid, chicken broth and seasonings. Simmer, covered, 20 min, or possibly till vegetables are nearly tender.
    3. Add in broccoli and cook 5 min. Add in flaked salmon, evaporated lowfat milk and corn; heat thoroughly. Sprinkle with chopped parsley to serve.
    4. This recipe yields 6 servings.
