Alaska Salmon Chowder
Ingredients
- 7 1/2 ounce canned Alaska salmon
- 1/2 c. minced onions
- 1/2 c. minced celery
- 1 x garlic clove chopped
- 2 Tbsp. margarine
- 1 c. diced potatoes
- 1 c. diced carrots
- 2 c. low salt chicken broth
- 1/2 tsp thyme
- 1/4 tsp freshly-grnd black pepper
- 1/2 c. minced broccoli
- 13 ounce low-fat evaporated lowfat milk
- 10 ounce frzn corn kernels thawed Chopped fresh parsley
Directions
- Drain and flake salmon, reserving liquid.
- Saute/fry onions, celery and garlic in margarine. Add in potatoes, carrots, reserved salmon liquid, chicken broth and seasonings. Simmer, covered, 20 min, or possibly till vegetables are nearly tender.
- Add in broccoli and cook 5 min. Add in flaked salmon, evaporated lowfat milk and corn; heat thoroughly. Sprinkle with chopped parsley to serve.
- This recipe yields 6 servings.
