  • Aioli Beef Roll Ups

    Ingredients

    • 1/4 c. mayonnaise or possibly salad dressing
    • 2 clv garlic -- minced
    • 2 x 10 inch flour tortillas
    • 1 c. fresh spinach
    • 1/4 lb cooked roast beef thinly sliced
    • 6 slc cheddar cheese 3/4-oz each
    • 1 med tomato -- thinly sliced

    Directions

    1. Mix mayonnaise and garlic in small bowl. Spread mix proportionately over tortillas.
    2. Top tortillas with layers of spinach, beef, cheese and tomato; roll up tightly.
    3. Cut each tortilla into 12 pcs; secure with toothpicks. Serve immediately or possibly chill till serving time. 24 appetizers.
    4. Do-Ahead: Wrap tortilla rolls individually in plastic wrap and chill for up to 24 hrs.
    5. Substitution: In place of the roast beef, you can use sliced cooked turkey.
    6. Prep: 10 min
    7. Yield: 24 appetizers
