Ingredients

  • 1 x acorn squash - (abt 1 1/2 lbs) deseeded, and cut into 6 wedges
  • 2 tsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp freshly-grnd black pepper
  • 3/4 c. unsweetened applesauce
  • 2 tsp butter
  • 1/8 tsp grnd cinnamon
  • 1 Tbsp. Atkins Sugar Free Pancake Syrup warmed

Directions

  1. Heat oven to 375 degrees. Brush squash with oil and sprinkle with salt and pepper. Place on a jelly roll pan lined with aluminum foil. Bake till squash is fork tender, about 20 min.
  2. In a small pot heat the applesauce. Stir in butter and cinnamon; cook 1 minute more.
  3. Serve squash with a dollop of applesauce and a drizzle of syrup.
  4. This recipe yields 6 servings.
  5. Description: "To make the squash easier to cut, microwave it whole for a minute. Trim the curved undersides of the squash pcs with a knife so they will lay flat and cook proportionately."
