Acorn Squash With Pecan Butter
Ingredients
- 1/4 c. unsalted butter
- 1/3 c. minced toasted pecan
- 1 Tbsp. maple syrup
- 1/2 tsp grnd cinnamon
- 1/2 tsp Kosher salt
- 1/4 tsp grnd ginger
- 1 dsh pepper Acorn Squash
- 2 x acorn squash
- 2 tsp extra virgin olive oil Kosher salt pepper, to taste
Directions
- In a small bowl combine the butter, pecans, maple syrup, cinnamon, salt and pepper. Mix well with a fork.
- Acorn Squash:Cut squash in half lengthwise. Remove seeds.
- Brush the flesh with extra virgin olive oil. Add in salt and pepper to taste.
- Grill the squash flesh side down till grill marks show. Turn the squash up and fill with the pecan butter. Grill for 20-30 min unit flesh is tender.
