- 2 sheets of puff pastry
- 1 12-ounce jar of peach or blueberry preserves
- 1 egg yolk
- 1 tablespoon unsalted butter
- 1 tablespoon flour
- Preheat oven to 375 degrees. Butter and flour a pie pan. Remove puff pastry from package. Line bottom of pie pan with one sheet of puff pastry, cutting off excess dough to fit. Spread a layer about 1/8" thick of preserves, setting aside 2 tbsp of preserves for later.
- Top this with the remaining sheet of puff pastry and seal layers by pressing with fingertips. Bake at 375 degrees for 30 minutes. Remove from oven, let cool. When cooled, spread the two remaining tbsp of preserves on top. Serve with fresh sliced peaches or fresh blueberries.
